Một đất nước với 80% dân số là nông dân và một nền nông nghiệp được hình thành, phát triển từ rất lâu thì chắc chắn Văn hóa ẩm thực của chúng ta cũng rất đa dạng và phong phú. Xét riêng về khía cạnh LTTP từ thời xưa thì nhiều câu ca dao, tục ngữ, nhiều tác phẩm văn học cổ đã ghi nhận những đặc sản nổi tiếng của từng vùng miền trong cả nước. Ngày nay xã hội phát triển, dân số đông hơn, toàn bộ phương thức sản xuất cũng thay đổi cho phù hợp với sự phát triển của nền kinh tế hiện đại, song những mặt tiêu cực và hạn chế của SXNN (sản xuất nông nghiệp) đã làm ảnh hưởng tới độ VSAT (vệ sinh an toàn thực phẩm) của NSTP (nông sản thực phẩm).Trong bối cảnh đó, nếu tất cả mọi người trong xã hội, đặc biệt là những người làm công tác SX, BQCB LTTP(sản xuất, bảo quản chế biến lương thực thực phẩm) cùng nhau quyết tâm tìm ra những giải pháp thích hợp để vừa lưu giữ được những giống cây con đặc sản có từ lâu đời, kết hợp những kinh nghiệm sản xuất truyền thống với SX hiện đại, vừa SX được nhiều nông sản thực phẩm sạch an toàn, cung cấp cho mọi người ở mọi lúc, mọi nơi thì chắc chắn nền Văn hóa ẩm thực của chúng ta sẽ đậm đà bản sắc dân tộc hơn.
Culinary culture on the aspect of food: past and present

Vietnam is the country with 80% of population being farmers and the agriculture was formed and developed long time ago, hence our food culture is diverse and abundant. From food stuff points of view, there have been lots of folks, proverbs, and literary work from ancient time documented the famous specialties of each region in the country. At present, the society becomes more developed: the population is more crowded, the production modes are changed to adapt with the development of the modern economy, however, the negative aspect and restriction of agricultural production has affected safety and hygiene levels of agricultural products. In this context, if everyone in the society, especially those working in food manufacturing, storing and processing cooperates with each other to find appropriate solutions to retain the special varieties, and the combination of the traditional manufacturing experience and modern production to produce many healthy and safe foods, providing for people at anytime in anywhere, then our food culture certainly has more ethnic identity.
