English summary: The study was conducted in the food processing establishments that made ready to eat food servings in Ha Nam province. 100% of air samples at the facilities had aerobic bacteria; 54.5% of cutting boards were contaminated wit Coliform, and 27.2% with E. coli 54.1% of the customers chose “normal” as the level of overall satisfaction for the service.
