Mục tiêu của nghiê cứu nhằm đánh giá thực trạng kiến thức an toàn thực phẩm (ATTP) của giáo viên mầm mon. Phương pháp: Nghiên cứu mô tả cắt ngang trên 721 giáo viên mầm non ở huyện Ý Yên, tỉnh Nam Định năm 2014.

Tóm tắt tiếng Việt: Mục tiêu của nghiê cứu nhằm đánh giá thực trạng kiến thức an toàn thực phẩm (ATTP) của giáo viên mầm mon. Phương pháp: Nghiên cứu mô tả cắt ngang trên 721 giáo viên mầm non ở huyện Ý Yên, tỉnh Nam Định năm 2014. Kết quả: Có 82% - 98,1% giáo viên hiểu biết về điều kiện vệ sinh cơ sở; 95% - 98,3% hiểu biết về điều kiện trang thiết bị dụng cụ; 94% hiểu biết về khái niệm thực phẩm; từ 96,4% - 99,9% biết được thời điểm rửa tay; 100% biết cách xử trí khi bị bệnh liên quan đến thực phẩm. Đối với căn nguyên gây ngộ độc thực phẩm (NĐTP) thì 96% hiểu do thực phẩm bị biến chất; 87,4% do hóa chất; 77% do vi sinh vật; 25,9% do vật lý, 72,8% - 99.7% biết các triệu chứng NĐTP; Chỉ có 57,4% hiểu Luật ATTP hiện là văn bản pháp lý cao nhất về công tác ATTP.

Knowledge on food hygiene and safety among preschool teachers in Y Yen district, Nam Dinh province

Results of a study among 721 preschool teachers in Y Yen district, Nam Dinh province showed that: 100% were women, 72.4% were between the ages of 30 – 49; 88.2% had college education; 11.4% had undergraduate/ graduate education. 82% met knowledge standards, 98.1% met standards for sanitation facility; 95% - 98.3% meet the criteria of equipments and instruments; 94% understood the concept of food; from 96.4% - 99.9% knew hand washing timing; 100% knew how to manage an illess related to food.

English summary: Results of a study among 721 preschool teachers in Y Yen district, Nam Dinh province showed that: 100% were women, 72.4% were between the ages of 30 – 49; 88.2% had college education; 11.4% had undergraduate/ graduate education. 82% met knowledge standards, 98.1% met standards for sanitation facility; 95% - 98.3% meet the criteria of equipments and instruments; 94% understood the concept of food; from 96.4% - 99.9% knew hand washing timing; 100% knew how to manage an illess related to food. Relating to causes of food poisoning: 96% understood by food deteriozation; 87.4% by chemicals; 77% by microorganisms; 25.9% by physical factors. 72.8% - 99.7% knew the symptoms of food poisoning, only 57.4% knew that food safety law was the highest legal document for food safety and hygiene control.
